Rom Cocktails


Between the Sheets
 
4,5 cl VS cognac
1,5 cl Rum blanco
1,5 cl Cointreau
3 cl lemon juice
1,5 cl sugar syrup
Ice cubes
Lemon twist to garnish

 
Add all the ingredients into a mixing glass and fill with ice. Cap with a Boston shaker and shake for a few seconds. Fine-strain into a chilled glass. Spray the oils from the lemon peel over the drink and drop into the glass. Sugar-coat the rim if you like.
 
 
Caramel Diaquiri
 
6 cl Rum, blanco or aged
1,5 cl Lime juice
1,5 cl Cinnamon
Ice cubes
Appropriate garnish (like stick)
 
Add all the ingredients into a mixing glass and fill with ice. Cap with a Boston shaker and shake vigorously until the shaker freezes on the outside. Fine-strain straight up into a chilled Martini glass. The garnish should complement your chosen flavoured syrup.
 
 
Cinnamon Diaquiri
 
6 cl Rum, blanco or aged
1,5 cl Lime juice
1,5 cl Cinnamon
Ice cubes

Cuba Libre
 
Lime wedge
Ice cubes
6 cl rum
Cola
Lime wedge, to garnish

 
Squeeze a lime wedge into the glass. Rub the lime around the rim of the glass with ice and add the rum. Top with cola and stir. Garnish with a wedge of lime. Serve with a long straw.
 
 
Daiquiri
 
6 cl aged
1,5 cl lime juice
1 barspoon of sugar syrup
Ice cubes
Lime wedge to garnish
 
Add all the ingredients into a mixing glass and fill with ice. Cap with a Boston shaker and shake vigorously until the shaker freezes on the outside. Strain into an ice-filled glass or fine-strain into a chilled Martini glass. Garnish with a wedge of lime. To serve on the rocks, strain over ice in a rocks glass. Alternatively use the Martini glass.
 
 
Gold Digger
 
2 cl Havana Club
2 cl Passoã
3 cl Orange
6 cl Passion Fruit juice
2 cl Lemon juice
1 cl Sugar syrup
Top with Champagne

 
Shake ingredients with ice; strain into ice-filled glass with pressed passion fruit. Top with Champagne and more ice. Garnish with passion fruit wedge. Add two straws.
 
 
Hurrican
 
2 cl rose's lime juice
3/4 cl maracuja
2 cl pinapple juice
2 cl orange juice
2 cl white rum
4,5 cl dark rum
Lime
 
Shake over crushed ice in a shaker, strain into a filled crushed ice glass. Add lime wedge.

Alternatively use the Highball Glass instead.

 
 
Jade
 
2 cl lime juice
1 barspoon sugar
Dash triple sec
Dash crème de menthe (green)
4,5 cl white rum

 
Shake well over ice cubes in a shaker, strain into a chilled cocktail glass.
 
 
La Floridita Daquiri
 
3,5 cl light rum
1,5 cl Maraschino liqueur
2 cl Lime Juice
2 cl Sugar syrup
3 cl Grapefruit juice
Splash maraschino purèe
1 maraschino

 
Shake all ingredients with ice strain into cocktail glass. Garnish with lemon peel and a maraschino.
 
 
Lady's Night
 
4 cl Captain Morgan Spiced, gold rum
2 cl Banana liqueur/ pineapple
top with guanabana (passion juice)
 
Shake ingredients with ice, strain into glass and top with guana-bana. Garnish with pineapple leaves and maraschino.
 
 
Love in the Sky
 
2 cl Bacardi lemon
2 cl Passoãa
0,5 cl sour mix
Orange soda
 
Shake first 3 ingredients and pour it in a highball glass with ice. Top with orange soda and garnish with a slice of orange slice.
 
 
Mai Tai
 
3 cl aged rum
1,5 cl triple sec
3/4 cl lime juice
4,5 cl pineapple juice
4,5 cl orange juice
Dash of grenadine
Ice cubes
1,5 cl dark rum
Maraschino cherry to garnish

 
Add all but the dark rum into a mixing glass and fill with ice. Cap with a Boston shaker and shake. Strain into a glass and top with the dark rum. Garnish with a cherry.

Alternatively use a Tiki Mug instead.

 
 
Melon Fudge
 
2 cl Raspberry rum
2 cl Watermelon liqeur
2 cl Lemon juice
2 cl Sugar syrup
3 cl Apple Juice
1 maraschino

 
Shake ingredients with ice cubes and strain into wine glass. Garnish with a maraschino.
 
 
Mojito
 
2-4 lime wedges
1,5-3 cl demerara sugar syrup or 1-2 barspoons demerara sugar (adjust to taste)
8-16 large mint leaves
Crushed ice
6 cl light or aged rum
Soda water
Mint sprig
 
Add the lime and sugar into a Collins glass and muddle. Add the mint leaves and place the flat end of the barspoon in the glass. Fill the glass with crushed ice and pour in the rum. Rapidly raise a lower the spoon to thoroughly mix the drink. Top with soda. Garnish with a sprig or mint, rubbing the leaves before serving to release the bouquet.
 
 
Mulata
 
Half a lime juice
3/4 cl crème de cacao (brown)
3/4 cl sugar syrup
6 cl white rum

 
Prepare in a blender with crushed ice, strain into a cocktail glass.
 
 
Mulata Daiquiri
 
3 cl Dark rum
2 cl Dark cacao liqueur
4 cl Lime Juice
3 cl Sugar syrup

 
Shake all ingredients with ice strain into glass. Garnish with lemon wedge.
 
 
Piña Colada
 
3 3/4 cl Coconut cream
6 cl Pineapple juice
6 cl White rum
 
Prepare in a blender with crushed ice. Pour into a large highball glass.
 
 
Presidente
 
3/4 cl dry vermouth
2 cl vermouth rosso
4,5 cl white rum
Dash grenadine
Stemmed cherry

 
Stir over ice cubes in a mixing glass, strain into a chilled cocktail glass. Garnish with cherry.
 
 
Quaker's
 
2 cl Lemon juice
1 barspoon powedered sugar
Dash cranberry syrup
2 cl Brandy
2 cl White rum

 
Shake well over ice cubes in a shaker, strain into a chilled cocktail glass.
 
 
Saoco
 
10,5 cl coconut milk
4,5 cl white rum

 
Stir over crushed ice in a collins glass.
 
 
Scorpion
 
Juice of half a lime
4,5 cl orange juice
3/4 cl triple sec
2 cl brandy
2 cl white rum
3 cl dark rum

 
Shake well over crushed ice in a shaker, strain into a large highball glass half-filled with crushed ice, drop the squeezed into the glass.
 
 
Sir Walter
 
2 cl lemon juice
3/4 cl triple sec
Dash grenadine
2 cl white rum
2 cl brandy

 
Shake well over ice cubes in a shaker, strain into a chilled cocktail glass.
 
 
Strawberry Daiquiri
 
6 cl aged rum
1,5 cl lime juice
1,5 cl muddle fresh strawberries or use strawberry purèe
1 barspoon of sugar syrup
ice cubes
a strawberry
 
Muddle fresh strawberries. Add all the ingredients into a mixing glass and fill with ice. Shake vigorously until the shaker freezes on the outside. Fine-strain into a chilled glass. Garnish with a strawberry.
 
 
Vanilla Diaquiri
 
6 cl blanco or aged rum
1,5 cl lime juice
1,5 cl vanilla
Ice cubes
Appropriate garnish (like vanilla stick)
 
Add all the ingredients into a mixing glass and fill with ice. Cap with a Boston shaker and shake vigorously until the shaker freezes on the outside. Fine-strain straight up into a chilled Martini glass. The garnish should complement your chosen flavoured syrup.
